Caribbean Fudge Pie Recipe
Ingredients:
12 oz of semisweet choco morsels
1/4 c of melted butter
3 large eggs
1 tsp of rum-based flavoring
1/4 c of flour
3/4 c of firmly-packed sugar (brown)
2 tsps of coffee (instant)
1 c of walnuts; chopped
1/2 c of walnuts; halved
1 pie pastry (9-inch)
Instructions:
Have oven preheated to 375 degrees F. Have the choco chips melted in saucepan placed over low-heat then cool once done.
You cream the butter & sugar together in large bowl ’til fluffy & light w/ your mixer set at mid-speed. Gradually add the eggs then beat very well after every addition.
You ad the choco chips, flavoring & powdered coffee, stir well to blend. Add flour & nuts then stir again. You pour the batter into unbaked crust then arrange rest of walnuts neatly around pie’s edge.
Have your pie baked for 25 mins ’til edges set. Place on racks to cool.
