Creole Eggplant Recipe
Ingredients:
1 peeled onion; chopped
8 ounces of tomato-sauce
1 seeded green bellpepper; chopped
1 garlic clove; crushed
1/4 tsp of dry oregano; crushed
1/2 tsp of salt
1 peeled eggplant; sliced then diced
1/4 tsp of hot-pepper sauce
1/4 tsp of black pepper (ground)
Instructions:
Combine the hot-pepper sauce, pepper, oregano, salt, garlic, tomato-sauce, bellpepper and onion in skillet then cook it over low-heat about 10 mins then add the eggplant.
Have pan covered then cook for 20 more mins, stirring often.

Quick and Easy Nutty Bars Recipe
Ingredients:
1 butter-recipe golden-cake mix (Duncan Hine’s)
1 & 1.2 c of chopped pecans
8 ounces of creamcheese
3/4 c of melted butter
1 c of brown packed sugar
Instructions:
Have oven preheated to three hundred fifty degrees Fahrenheit. Grease & flour one 13×9″ pan.
Combine cake-mix, 3/4 c nuts, 3/4 c butter & cake-mix in medium-sized bowl ’til blended well. You press the mixture into bottom-part of greased pan.
Combine creamcheese and sugar ’til blended thoroughly. Spread this mixture over cake-mix layer then sprinkle w/ nuts. Have it baked for 25-30 mins ’til edges brown & topping sets.
Completely cool prior to slicing into squares. Keep in well-covered containers inside your fridge.

Banana Wafer Pudding Recipe
Ingredients:
14 oz of sweetened milk (condensed)
1 pack of instant pudding-mix (vanilla)
1 & 1/2 c of water
2 c of thick cream
3 sliced bananas
36 vanilla-flavored wafers
1/2 c juice of lemon
Instructions:
Combine water & milk in bowl. Beat the pudding-mix in, blending ’til smoothened. Chill for about 5 mins.
Whip the cream in another bowl ’til stiffened peaks are formed. Fold this into chilled pudding-mix.
You dip banana slices into juice of lemon, shaking off any excess juice.
Spoon a cup of mixture into 2 & 1/2-qt bowl. Top w/ 1/3 of wafers, pudding & bananas. Repeat layering two times. Chill.

Fruit Cups w/ Pineapple Dressing Recipe
Ingredients:
15 & 1/2 oz of pineapple-chunks
2 sliced bananas
1 lb of grapes (seedless)
3 Tbsps of mayonnaise
11 oz sections of orange (Mandarin)
1 chopped apple
1 & 1/4 c of mallow creme
1/4 tsp of vanilla
Instructions:
Drain the pineapples then reserve the liquid. Do the same for the oranges then set them aside.
Combine grapes, apples, bananas, pineapples & oranges then toss to mix well. You spoon mixed fruits onto individual dishes.
Separately combine reserved juice, vanilla, mayonnaise, & mallow creme, stirring well. You spoon this mixture over mixed fruits.

Quick Peanut Butter Fudge Recipe
Ingredients:
1 c of peanut butter (creamy)
1 c of butter (or margarine)
1 c of nuts; chopped
2 c of confectioner’s sugar
Instructions:
Combine butter with (peanut) butter inside a saucepan above heat; stir constantly till melted. Add the nuts; stir thoroughly. Take out from the heat then add sifted confectioner; stir thoroughly till blended well.
Transfer on a 9×9x2 inch baking pan. Place inside the refrigerator till firm then cut to squares.

Quick and Easy Gazpacho Recipe
Ingredients:
2 peeled ripened tomatoes
1/4 c of diced bellpepper
1 peeled cucumber
1/4 c of onion (diced)
2 Tbsps of oil (olive)
1 c of tomato-juice
1 & 1/2 tsps of red-wine vinegar
A dash of Tabasco
Pepper
Salt
Garlic
Instructions:
Place all of the ingredients inside your blender then blend ’til mixed well. Chill then serve while cold. Best when garnished w/ croutons or celery.
