Quick and Easy Gazpacho Recipe
Ingredients:
2 peeled ripened tomatoes
1/4 c of diced bellpepper
1 peeled cucumber
1/4 c of onion (diced)
2 Tbsps of oil (olive)
1 c of tomato-juice
1 & 1/2 tsps of red-wine vinegar
A dash of Tabasco
Pepper
Salt
Garlic
Instructions:
Place all of the ingredients inside your blender then blend ’til mixed well. Chill then serve while cold. Best when garnished w/ croutons or celery.

Banana Oatmeal Cookies Recipe
Ingredients:
1 c of sugar
1 large egg
3/4 c of shortening
3/4 tsp of ground cinnamon
1 tsp of salt
1/4 tsp of ground nutmeg
1 c of mashed bananas
1 & 3/4 c of quick-cooking oats
1 & 1/2 c of flour
1/2 c of chopped nuts
Instructions:
Cream shortening & sugar using your mixer set at mid-speed. Add salt, nutmeg, cinnamon 7 egg, mixing well. Add bananas in.
Add oats & flour as well. Fold nuts in. You drop mixture by heaping teaspoonfuls into bake sheets. Have them baked at three hundred fifty degrees Fahrenheit for 10-15 mins.

Quick Pecan Fudge Recipe
Ingredients:
1-1/2 c of sugar (refined)
2/3 c of evaporated milk
2 Tbsps of butter (unsalted)
1/4 tsp of salt
1-1/2 c of chocolate chips (semisweet)
4 oz of marshmallows (miniature)
1 tsp of vanilla extract
3/4 c of pecans; chopped
Instructions:
Combine milk, sugar, salt, and butter inside a saucepan above moderate heat. Let it boil and stir constantly. Continue to boil for 4-5 mins.
Take out from the heat and add the chips, vanilla, and marshmallows; stir thoroughly for a minute or till marshmallows melt.
Pour onto a foil-lined 8 inch baking pan then sprinkle over pecans; press them gently. Place inside the refrigerator till set. Cut to sixteen pieces.

Quesadillas Recipe
Ingredients:
3 c of diced browned chicken-breasts
1 & 1/2 teaspoons of chili seasoning
1 teaspoon of cumin seeds
1 teaspoon of chopped flaked onions
A jar of nacho-cheese dip
1/2 teaspoon of garlic seasoning
1 pack of flour-tortillas
2 c of grated cheese (Cheddar)
Instructions:
Cook the chicken w/ garlic seasoning, flaked onions, chili seasoning & cumin seeds ’til browned. Combine nacho-cheese dip w/ soup.
You place a tortilla into flat bake sheet then spread thinly w/ chicken-cheese mixture over. You top w/ tortilla then sprinkle w/ Cheddar. Transfer into broiler then cook for about 30 to 40 secs ’til cheese melts.
You slice the tortillas carefully into serving-size slices then serve w/ Mexican side-dishes.

Dijon Salmon Recipe
Ingredients:
4 oz of salmon fillets
Pepper
Salt
3 Tbsps of Dijon mustard
1/4 c of melted butter
1/4 c of Italian seasoned dried breadcrumbs
Instructions:
Have the oven preheated to four hundred degrees Fahrenheit. Arrange the fillets w/ skin-side-down on aluminum-foil lined shallow bake pan.
You spread little mustard over every fillet then season w/ pepper & salt. Top w/ crumbs & then evenly drizzle w/ butter. You bake them for about 15 mins ’til salmon turns flaky.

Quick and Easy Cookies Recipe
Ingredients:
1/2 c of peanut-butter
1/4 c of cocoa
2 c of sugar
3 c of Rice-Krispies
1/2 c of sweetened milk
1/4 c of margarine
1 teaspoon of vanilla
Instructions:
Heat together vanilla, butter & milk then add the sugar & cocoa. Stir ’til dissolved then boil for 2 mins. You remove mixture from the heat then add the peanut-butter, stirring to blend.
Add krispies then stir to evenly coat. You drop spoonfuls of mixture into waxpaper then cool completely.
