Cheesy Potato and Egg Fritatta Recipe
Ingredients:
2 Tbsps if veggie oil
6 beaten eggs
1 peeled potato (large); sliced into 1/4-inch thick
1/2 c of shredded cheese (Cheddar)
Pepper
Salt
Instructions:
Have oil heated in skillet placed over mid-heat. Spread the slices of potato across pan then cook, turn once ’til evenly golden. Remove them from your pan & drain.
Put them back into pan then adjust to high-heat. You pour eggs in then season w/ pepper & salt. Adjust to low-heat have pan covered w/ plate. You flip it for fritatta to transfer into plate. Cook the other side.
Cover & cook for 2 more mins. Drain once done then serve.
