Crawfish Etouffee Recipe
Ingredients:
1/4 c of butter
1 c of seeded bellpepper (green); chopped
2 garlic cloves; chopped
1 c of chopped onions
1/2 c of celery; sliced
1 lb of crayfish-tail meat
1/2 c of chicken stock
A can of condensed cream-of-celery soup
1/4 c of chopped parsley
1/2 tsp of hot-pepper sauce
1 tsp of salt
3 c of cooked rice (long-grain)
1/8 tsp of pepper
Instructions:
Have butter melted in large skillet placed over mid-heat. Add the garlic, celery, bellpepper & onions once heated. Saute them for 4 mins til crisp & tender.
Add pepper, hot-pepper sauce, salt, parsley, stock, soup & crayfish, stirring well. Boil then reduce the heat. Simmer about 10-15 mins. Best when served w/ rice.
