Crispy Eggplant Recipe
Ingredients:
1 large eggplant
3 Tbsps of flour (all-purpose)
1 beaten egg
2 c of bread crumbs sprinkled w/ Italian seasoning
8 oz of sourcream
Instructions:
Have oven preheated to three hundred twenty-five degrees Fahrenheit. Grease one flat bake sheet. You wash the eggplant thoroughly then slice it into 1/4-1/2″ slices.
Combine the sourcream & egg in mixing bowl ’til blended well. Toss these slices of eggplant w/ flour & evenly coat.
You dip eggplant pieces individually into prepared batter and coat them w/ seasoned crumbs.
Arrange them into prepared bake sheet then spray top w/ edible spray. Have them baked for about 15 mins then you turn over & cook the opposite side for 15-20 mins ’til evenly browned & crisp.
