New England Crab and Corn Chowder Recipe
Ingredients:
2 slices of bacon cut to half-inch pcs
1 peeled onion (large); chopped finely
1 Tbsp of butter
2 Tbsps of flour
1 peeled potato (large); sliced into 1/4″ dice
3 c of chicken stock
3/4 c of half-and-half
1/2 seeded bellpepper (red); sliced into 1/4″ dice
11 ounces of drained corn
1/2 lb of cooked crabmeat
1/4 tsp of salt
2 onions (green); sliced thinly
1/8 tsps of ground pepper (black)
Instructions:
Have the bacon cooked in stockpot placed over mid-heat ’til golden-brown. Drain off extra fat. You add the onions & butter then saute for 4 mins ’til soft. Add the flour then mix. Cook for 3 more mins, stirring often.
You add the chicken stock then the potatoes as well. Simmer then cook for 12 more mins ’til potato becomes tender. You add the crabmeat, bellpepper & half-and-half.
Continue simmering for additional 5 mins ’til thoroughly heated & bellpepper becomes tender. Add pepper & salt as desired then garnish w/ green-onions.
