Quick Pasta Faglio Recipe
Ingredients:
2 pcs of garlic cloves
2 Tbsps of oil (olive oil)
1 pc of carrot (large); peeled and chopped coarsely
1 pc of onion (large); chopped coarsely
1 tsp of rosemary (leaf); crumbled
4 Tbsps of tomato paste
60 oz of canned white beans (kidney, undrained)
6 c of broth (chicken)
6 oz of small pasta (elbows or shells)
2 Tbsps of vinegar (red wine)
1/2 c of grated cheese (Parmesan)
1/4 c of parsley (fresh); chopped finely
Instructions:
Saute garlic, onion, and carrots with oil inside a skillet for 3-5 mins. Add paste and rosemary; stir them well. Add broth and beans w/ its liquid; simmer for 2 mins, uncovered.
Add the pasta and stir; let it simmer, covered, for eight mins till pasta becomes ‘al dente’, while occasionally stirring.
Take out from the heat and let it stand for 10 mins, covered. Season salt, when needed then add vinegar onto the soup; stir thoroughly. Combine parsley and grated cheese; sprinkle them over the soup.
