Quick Skillet Gumbo Recipe
Ingredients:
12 oz of luncheon meat (canned); cut into strips
3 tsps of oil (vegetable oil)
1 pc of onion (large); chopped
10 oz of okra (frozen cut)
16 oz of tomatoes (canned); broken
1 c of broth (chicken)
1/8 tsp of pepper (black)
1/2 tsp of salt
1 pc of bay leaf
Instructions:
Cook the meat with oil on a skillet above moderate heat till browned. Add the onion and cook till soft and translucent. Add tomatoes, okra, seasonings, and broth; let it boil, covered.
Lower down the heat and let it simmer, uncovered, for 10 mins or till okra has softened and the liquid becomes slightly thick. Discard the (bay) leaf.
