Salsa Chicken & Rice Recipe
Ingredients:
2 c of warm rice (cooked, white)
1 Tbsp of oil (vegetable oil)
1 pc of onion (medium); chopped
16 oz of mild salsa (Homestyle Recipe)
1/2 c of shredded cheese (Mexican-blend)
1 lb of chicken breast fillet halves (skinless); cut to strips
8 oz of sour cream
1 pc of bell pepper (red, small); sliced
1/4 c of cilantro (fresh); chopped
Instructions;
Heat the oil on a skillet above moderately high heat then add onion, red pepper, and chicken. Cook for 10-12 mins or till chicken isn’t pink anymore; stir occasionally. Add salsa and stir thoroughly; let it boil.
Take out from the heat and sprinkle over cheese. Let it stand, covered, for five mins till cheese melts. Serve hot above warm rice and garnish cilantro and (sour) cream.
