Sesame Chicken & Bean Salad Recipe
Ingredients:
1 lb of asparagus; rinsed then cut to 1 inch pieces
3/4 c of dressing (Italian)
2 Tbsps of oil (sesame oil)
3 Tbsps of soy sauce
1-1/2 tsps of gingerroot; grated
1/3 c of onions (green)
30 oz of canned beans (pinto or black); rinsed then drained
1 lb of fresh chicken breast fillets (skinless); grilled or broiled then shredded
6 c of spinach (leaves); rinsed thoroughly
2 Tbsps of kernels (sunflower)
Instructions:
Steam the asparagus for 3 mins till crisp-tender. Let it cool on the side. Combine oil, dressing, ginger, and soy inside a bowl; whisk thoroughly. Combine chicken, beans, onion, and asparagus inside a bowl; mix them well.
Drizzle over the mixture of dressing then toss gently till coated well. Arrange the spinach leaves on the plates and spoon over the mixture of bean. Sprinkle kernels. Serve at once.
