Thai Noodles Recipe
Ingredients:
8 oz of noodles (rice, 1/4-inch thick)
1/4 c of catsup
1 Tbsp of sugar (brown)
1/4 tsp of crushed pepper flakes (red)
1/4 tsp of ginger (ground)
2 Tbsps of oil (vegetable oil)
4 pcs of eggs (large); beaten
8 pcs of onions (green); cut to 1-1/2 inch pieces
2 c of bean sprouts
1 pc of garlic clove; peeled and sliced thinly
1/4 c of dry-roasted peanuts (unsalted); chopped
2 Tbsps of soy sauce
Instructions:
Cover hot water on the noodles inside a bowl; let it stand, at about half an hour, while separating them as often. Once pliable, drain thoroughly.
Combine catsup, soy, sugar, ginger, and crushed pepper inside a bowl; set on the side. Place one-half of oil on a non-stick skillet above moderate heat then add eggs; swirl gently and coat the pan.
Once it sets, flip to cook the other side. Take out from the pan then slice thinly. Reheat the pan above moderately high heat then add the rest of oil.
Saute garlic and onions for two mins then add (bean) sprouts; stir-fry them for a min.
Add the mixture of catsup then mix thoroughly.
Add the eggs along with the noodles; toss till coated evenly and heated thoroughly. Serve at once and garnish peanuts.
