Whipped Sweet Potato Casserole Recipe
Ingredients:
2 Tbsps of juice (orange)
3/4 c of sugar (brown)
1/8 tsp of nutmeg (ground)
2 Tbsps of butter (cold); cubed
1 c of marshmallows (miniature)
2 lbs of potatoes (sweet); peeled then cubed
Instructions:
Preheat the oven (350 degrees F). Cook the (sweet) potatoes on water with salt inside a saucepan above medium-high heat, about twenty mins or till cooked thorough.
Drain thoroughly then add sugar, butter, juice, and nutmeg; whip thoroughly till smooth.
Transfer on a medium-sized casserole and spread evenly.
Top it with mini marshmallows. Place inside (preheated) oven and bake for 10 mins or till marshmallows become golden.
